To prepare the filling:
Place the chocolate chips in a microwave safe bowl and microwave safe bowl and microwave on high heat for 30 seconds, then stir. If the chocolate is not all melted, place it back on the microwave for 15 seconds at a time, stirring after each time, until it is completely it is completely melted. See that not to let the chocolate start to bubble or it will burn up and get gritty. Stir with the butter and make it to cool in the room temperature. Stir in the cream and refrigerate for 30 minutes. Beat the mixture with an electric mixer for 5 minutes, or until fluffy. Refrigerate until ready to use.
To Prepare the Cake:
Generously butter 8 ramekins or custard dishes and place them in a baking pan.
Place the chocolate chips in a safe bowl in the microwave on high heat for one minute, then stir. Suppose if the chocolate is not at all melted, keep it back in the microwave for more 15 seconds, stirring after each time, until it is completely melted, being careful not to let the chocolate burn. Stir in the butter and let cool slightly.
White part and remove the yellow part separately from the eggs. The white part is the yolk; place the yolks in a large bowl and the whites in a medium bowl. Add ¼ cup of the sugar to the egg yolks and beat with an electric mixer for 4 to 5 minutes, or until think and lightly colored. Stir in the melted chocolate and then the flour. Wash the beaters. Until frothy beat the egg whites on high speed for one minute. Add the remaining ¼ cup sugar and beat for 2 minutes. Stir about one fourth of the egg whites into the chocolate to loosen it, and then gently fold the left over egg whites into the chocolate mixture.
Fill each of the ramekins halfway with the batter. Place a small scoop of the filling in the center and fill about three quarters of the way with the remaining batter. Refrigerate for at least two hours, or until just prior to baking and serving.
Bake in a preheated oven at 180 degrees Centigrade or 350 degrees Fahrenheit for 30 to 35 minutes. Then remove from the oven and cool it for ten minutes. Serve immediately. |
