Quick Iced Chocolate Cake

Makes 12 slices 


Ingredients: 


1 ½ cups flour (maida)


4 tablespoon cocoa powder


1 teaspoon soda bicarbonate


6 tablespoon oil


1 cup plus 2 tablespoon sugar


1 cup milk


1 teaspoon white vinegar


1 teaspoon vanilla essence 


Icing: 


2 tablespoon butter – melted


6 tablespoon cocoa


1 cup icing sugar – sifted


½ teaspoon vanilla essence


2 to 3 tablespoon hot water 

  Instructions
 

· Sieve flour, cocoa and soda bicarbonate.




· Put the flour in a bowl.  Add sugar, oil, milk, vinegar and the essence.  Mix well.


· Grease an 8 inch cake tin and dust it with maida.


· Pour the mixture and bake at 180 degrees centigrade or 350 degrees Fahrenheit or Gas mark 4 for 35 to 40 minutes or till done.


· For the icing, melt butter and pour in a mixing bowl.  Add cocoa to the melted butter.


· Sift icing sugar and add to the cocoa mixture.  Add essence. Mix.


· Add hot water little by little till the icing has a soft spreading consistency.


· Spread the icing on a cool cake.  Allow to set.
